Baked Chicken A La Isabel
(which should really be called “Italian Baked Chicken” but since I made it up, it’s now named after me)
Ingredients
1 whole baking chicken
Your favorite Italian spices (I used oregano, thyme, parsley, garlic powder, salt and pepper)
Extra virgin Coconut Oil (www.nutiva.net>)
Directions
1. Preheat oven at 350 degrees
2. Place 1-2 heaping TBSPs of coconut oil in a small pan and melt over low heat until it becomes liquid.
3. In a bowl, mix 1-2 tsps of each of the spices (you can use whichever ones you like).
4. Pour the melted coconut oil into the bowl with the spices and mix well.
5. Let the coconut oil/spice mixture cool down a bit.
6. Using your hands, rub this mixture under the skin of the chicken. Make sure to coat it thoroughly.
7. Place the chicken, breast side down, in a glass baking pan. (This will make sure the breast is juicy)
8. Bake in the oven for 2-3 hours. (This will be determined by the size of your chicken. After the first hour and a half, begin to check it consistently every 10-15 minutes until cooked through)
This chicken was even delicious after it was re-heated. I made it in the early morning and it was ready by 10am. After letting it cool down a bit (20 min), I covered it with foil and placed it in the refrigerator. When I got home at 5pm, I set the oven at 250 degrees and placed the chicken in there for 20 minutes. It was still great. So if you need to have dinner ready ahead of time, you can still use this recipe.

I have a very similar recipe but instead of Coconut Oil I use Extra Virgin Olive Oil.
For the past six years I have3 tried to lose weight, I spent a fair amount of time in hospitals due to a heart condition and had quite a lot of contact with dietitians, (bah humbug). In my one stay at the Trillium West Hospital, I went in at 210 lbs. and while trying to control my condition, I gained a whopping 70 lbs. in 23 days. They thought someone was bringing in foodstuffs. But no one was. As bad and as little that they fed the patients, I still gained.
Six years later, I’ve been able to lose 11 lbs. but the weight just fluctuates constantly. I’ve had 2 more heart attacks and a stroke (minor), so that my mobility is next to nothing. I get around some, but not enough to call it a cardio work out.
I just received and e-mail that contained your URL and I got curious. Well in this case, “Curiosity Did Not KILL The Cat”.
My financial situation’s not the best right now, but you have given me enough to start with and as soon as I can I will order your “Solution”.

I found what little I have seen on this web page very interesting as I have been for some time trying to find “fat free” not low fat recipes.
Long story short…my husband is 57 and has had a heart attack and has 2 stents along with advanced fatty liver disease. He was told to do cardio walking and eat a NO FAT diet. I have just been told to go on a “STRICT NO FAT” diet as my triglycerides are 294 with quite a bit of heart disease in family. I have mitral valve prolapse with a mild heart murmur, high blood pressue and am hypoglycemic.
We live in the south where everything including dessert is fried. We have gotten away from that but do eat out often. I would like to cook more if I only had recipes that would follow doctors orders of “No Fat” diets. This is very complicated for someone to do as I can only find “Low Fat” diets. Not the same as I can tell. Can you give me some insight on anything I have mentioned above. It would be greatly appreciated.

i find that organic foods are rather expensive, is it still okay to use regular store bought products? Do you have a shopping list for people starting out on this diet jump?

I went and checked out the breads you recommend at the health food store. They are 5 dollars a loaf and frozen. Is there a reasonable bread that can be bought at the grocery store or is there a good recipe for the bread machine?

Do you have recipies of one meal a day. I have plan to undergo this method any suggetion of meals that i can get the same nuetrens 3 meals a day?
When you purchase the DSP manual, you actually receive a set of meal plans detailing the different choices you could make at each meal.
I was wondering why you need to rub the chicken with oil? Chicken contains a lot of fat in the skin already. The herbs and spices will adhere to the chicken without the oil,so is there some benefit to rubbing it with oil?
I noticed that rice was one of your good grains…jacks my husbands blood sugar way up..I am curious about spelt. I have the flour and wonder if this will have the same effect as the rice….no rice flour in our diet.
Barbara, spelt flour is fine.
Brining the chicken for an hour and roasting in a vertical position for an hour to 75 mins. @ 350 will be much more effective than cooking for 2-3 hours. Plus brining seasons the chicken to the bone and helps protect against overcooking. Roasting in a vertical position will allow the fat to run off and give you crispy skin.mmmmm And mixing the oil and spices does make it easier to apply the herbs/spices more evenly. And you can rub the oil mix under the skin of the thigh for more flavor.
The key to focus on with the Diet Solution is developing NEW habits… I find that it is just as easy to buy the right foods as it is to buy the wrong ones. It takes the same amount of time to go into a grocery store and buy “ready made” hard boiled eggs and fruit for lunch on the go as it does to go through the McDonalds drive through. Less time if you plan ahead and have the cooler bag in your car! NEW HABIT!

The closest I ever got to cooking was bacon and eggs but now, I can’t wait to try ALL your recipes! Thank you so much for sharing. My question is: What do you mean by “rub the mixture under the skin”? Do you mean peel back and lift the chicken skin and place the mixture under? This has been my recipe for chicken for decades, only -being Greek- I use olive oil. It was my om’s recipe before me and my great aunt’s before her. The tip of rubbing the spices on the chicken under the skin is great and I’m going to try it tonight, when as it happens, we are having chicken. Mom always accompanied her chicken with potatoes baked in the same pan but nowadays I prefer salad or veggies.
This is very similar to how I cook my turkeys whenever I have them and have started to cook my chickens now too. The spices vary and I like to use Rosemary and garlic quite often. A word of caution to those who use olive oil. I’ve read recently that if you COOK olive oil it turns from a healthy oil into an artery clogging one. That its great to use on top of cooked food or as a dressing. Hence I believe why Isabel is using coconut oil as do I. I’ve lost weight and have more energy simply by cooking with coconut oil. I like organic virgin, unrefined from Tropical Traditions.

Was told by a dietitican that I should eat 1200 calories due to diabetes and break it down into 200 increments for meals and snacks. I am hungry. I read in Diet Solutions and figured that I should be eating 1800 calories to lose weight. Does this sound correct? I know I am hungry all the time. I’m not getting anywhere.
Both my wife and I started your program 8 weeks ago today. Why yes its difficult to eat healthy and maybe a little pricey we have forced ourselves to do the best. My wife has lost 10 lb and 12″ and I have lost 12 lb and 14″. The best part is that we feel great and the food (I do all the cooking) tastes so much better. My yearly physical this week revealed a 146 on total colesterol down from 235. Thank you.
I love the coconut oil. It is true that it boosts the fat burning process. I do not really know how much weight I have lost. I just know that my clothes feel not as tight and my energy level has increased. I am so proud I check out the Diet Solution. It works. Keep up the good work Isabel.
I am sure that I’m the one and only fat vegan in this world! This is quite frusterating and embarrasing because I eat healthy!
I really don’t know what to eat anymore. Someone says eat this and then someone else tells you it is bad for you. Therefore, as a scared consumer and young mother, I end up eating the same things over and over. I am begining to hate food!!! My diet consists of mainly breads; potato, rice, crackers, wraps, 100 percent WW bread etc., with lots of fruit and veg. I buy my family organic meat that they eat 2-3 times a week because I want my young children to have plenty of protien in thier diet.
I am trying to incorporate a healthy lifestyle for my young family and myself. I would eventually like to have my family vegan like myself. Even though my husband enjoys vegitarian meals he also likes his hambergers too
If I could have some really tasty vegitarian recipies I am sure that my weight will drop and that my family will be happy and healthy!
