Warm and Nutty Cinnamon Quinoa

Serves 4

Ingredients

1 cup coconut milk

1 cup water

1 cup organic quinoa, ( rinse quinoa before cooking)

2 cups fresh blueberries

1/2 teaspoon ground cinnamon

1/3 cup chopped pecans or walnuts

Directions

Combine milk, water and quinoa in a medium saucepan. Bring to a boil over high heat. Reduce heat to medium-low; cover and simmer 15 minutes or until most of the liquid is absorbed. Turn off heat; let stand covered 5 minutes. Stir in blueberries and cinnamon (you can also add a little stevia to sweeten); transfer to four bowls and top with pecans or walnuts.

    I have rescently discovered Ouinoa, and the deli clerk I got it from says it’s the next super fruit. He called it a fruit even though it’s actually a seed. It’s from Peru. Do you have recipies for this grest stuff besides cinnomin? Bugh! no offense. I have gotten it w/spinach and onions but don’t know exactly whats in it for sure.

    Quinoa…I first found it at a co-op in Arcata, CA as a dessert. Now I buy several pounds and especially love it in the summer. The Co-op handed out a very detailed info sheet plus some recipes. I would be happy to send a copy to Isabelle de los Rios if she would send me an address.
    The recipe I have uses apple juice for sweetener, and I make up double batches to keep in the fridge to nibble on.
    Quinoa is a member of the order Carophyllales. One plant can produce as many as a half million seeds. It has a high percentage of protein – 18%, while wheat only has 10-14%.

    Quinoa is actually higher in protein than most grains. It’s nutritional value can be enhanced by cooking it in broth rather than water. (bone broth preferred, but others will do). It can be flavored any way you like…either sweetened or savory. For a savory treat, cook quinoa in chicken broth and add your favorite seared vegetable. Or cook in water with lemon juice and add capers. Or cook it in broth and cover with gravy like rice or potatoes. Quinoa can be substituted anyplace rice is called for.

    Quinoa can be toasted in a dry frying pan before adding broth to cook it. This gives it a really nutty taste. It is great with lots of veggies added while it cooks and try adding some sesame oil and lt soy sauce. For protein add shrimp or chicken.

    I was trying a raw diet for awhile and sprouted my quinoa – then put it in a blender with fresh young coconut meat and some strawberries and banana – it is delicious like eating oatmeal but fresh, raw and flexible – depending on how much you put of everything you can make it thicker or thinner, sweeter or not. It doesn’t take long for the quinoa to sprout.

    SO HOW DOES 1 SV BREAK DOWN?? 1 PROTEIN 1 CARB?? AND IF YOU USE FRUTIVIA IN-STED OF STEVIVA IS THAT OK I JUST CANT DEAL WITH STEVIVAS AFTER TASTE AND DONT WANNA GO BACK TO SPLENDA

    Marilyn, it’s about 1 protein and 1 1/2 carb. As for the sweeteners, I would stick with stevia. If you really hate it, you could try xylitol.

    What think about red river cereal , I make a huge pot of cooked rolled oats, and huge pot of red river cereal and mix them together when cooked, then portion out for breakfast ! Are these grains ok for the dsp?

    I have a great twist: Mix the Quinoa with a few spoons of apple sauce, ad nuts, raisins and cinnamon. No sugar needed!

    Mari, try xylitol – that’s the only other sweetener I would really recommend using.

    Yani, you could use almond milk – it will give it a different taste, but I would imagine it will still taste good!

    this is my first try of quinoa, and I made it just as recipe calls for, and I love it! I did burn it a bit, but I like the extra crunch. Delish! Will make again.

    I have not tried this one as of yet but have had the stuffed peppers twice. I would really like my books so I know how much a serving is. I really don’t have anything to follow so I am not losing like I should be. I will give this a try this week.

    Isabel – FIRST congrats on the new baby!!
    Second I can’t wait to try this recipe but was wondering your thoughts on raisins. I don’t remember reading you mentioning them anywhere in your information. I eat them in a raw nut mix with org choc pieces (great trail mix) and also in my oatmeals. Of course, I’m buying the organic brands. How do you feel about eating them on a daily basis?

    I would like to know how do you feel about dry fruit in general on the DSP? By the way, it’s amazing how good you look after having your second child. It’s encouraging to me. Although, I think my baby making days are over, but I can still try to look sexy in 14 days, especially for swim wear. LOL
