Chicken with “I’m not afraid of butter” Dressing

Ingredients
2 large chicken breasts (approximately 1 lb of chicken)
6 tablespoons melted butter
Lemon juice from 1/2 large lemon
1/4 cup extra virgin olive oil
Sea salt, pepper and garlic powder to taste

Directions
Melt 1 tablespooon of butter in a large pan. Season chicken breasts with salt, pepper and garlic powder. Cook chicken breasts in butter covered on very low heat. Do not let the butter get brown. Pour lemon juice in a seperate bowl. Slowly stir in the remaining melted butter as you stir mixture. Then slowly add the olive oil as you stir mixture. Season with salt, pepper and garlic powder.

Once the chicken is cooked through, serve on a plate and pour the “dressing mixture” over your cooked chicken breasts.

Don’t be surprised if you are tempted to pour this dressing on your veggies and just about every other food item you can think of. It’s delicious!

    Isabel,

    I see that you use butter and cheese in some of your recipes. For a person who is severely lactose intolerant to the point of diarrhea, gas and cramping if only a little butter or milk product is used (despite taking the lactase enzyme), is there an alternative to the butter and milk products? I have been using olive oil as my “butter” on potatoes, chicken, etc.

    Do you know if a non-hydrogenated product like Earth Balance is a good substitute for butter in your recipes? Earth Balance contains the following: Expeller-pressed natural oil blend (soybeans, palm fruit, canola and olive), filtered water, natural flavor (derived from corn, no msg, no alcohol, no gluten), soy protein, soy lecithin, lactic acid (non-dairy, derived from sugar beets), and naturally extracted annatto for color.

    Rebecca, I would not suggest using Earth Balance – soy is something I recommend staying away from. Being severely lactose intolerant is not a terrible thing when following the DSP. I actually tend to recommend that people wean themselves off dairy altogether, as it is the cause of many problems for many people. While I don’t really have a substitute for the butter in this recipe, you can use coconut oil when you’re cooking. Hope this helps!

    Judy, a serving of chicken is 3-4 ounces. If you make this recipe using a pound of chicken, it should make about 4 servings. Enjoy!

    We’ve made this twice now and I can’t believe how easy and delicious it is. After having some chicken picatta in a restaurant, my husband commented that it tasted just like this recipe that we’d made at home. It made me realize that capers would be a great addition to this. We had it again for dinner tonight served with some organic, brown rice spaghetti. The extra dressing is wonderful on green beans :-)

    I made “I’m not affraid of butter” chicken for dinner tonight and served it on a bed of mashed cauli (Cauli Mash recipe also available from Isabel) with fresh green beans, drizzled the beautiful dressing over the entire meal and it was a SENSATION!!!

    This was an eye opening and so good.
    Thank you ! I am beginning to understand better the good fat bad fat idea and also the carbs.
    Once again thank you and I look forward to seeing the change in how I feel after the 7 day kick start. I and a friend are doing a 14 day being good from your e course and it is starting to be easier to follow. I miss wheat and rice but it will do me good as I am about 2 and a 1/2 stone over my desired weight.
