Tilapia Salad

Ingredients
Large serving of spring mix lettuce
Slices of cucumber
Broccoli
Cauliflower
Carrots
Tomato
Flax seeds (small amount)
Tilapia (recipe below)
Dressing (recipe below)

Tilapia
4 tilapia filets (will most likely have leftovers)
3 garlic cloves, cut into small pieces
Coconut Oil
Celtic Sea Salt
Pepper

Heat the coconut oil in a frying pan and add in the garlic cloves and some salt and pepper. When the cloves start to brown, put the tilapia in the pan for about 4 minutes on each side, until browned.

Dressing
Apple Cider Vinegar
Extra-Virgin Olive Oil
Celtic Sea Salt
Pepper
Garlic Powder

Combine all ingredients and shake well.

Salad Directions
Lay a bed of lettuce on your plate. Add the vegetables, tilapia, and the garlic pieces (from cooking the tilapia – they should be nice and dark brown). Sprinkle the flax seeds, add your dressing, and enjoy!

*This recipe works well with salmon and shrimp, too!

    I’m a diabetic and I have been trying to turn myself around for years, yes I gave up off and on, but I feel this time it may work. I’m really excited about your book and can’t wait to try your recipes. Having someone to talk to helps alot to, especially if they are encourageing and helpful.

    I noticed that you have flax seed sprinkled on this salad. I thought our bodies could not digest flax seed and that we have to grind it first. Is that true?

    This is good .. I’m from Malaysia and we have lots of red tilapia here..cheap protein source! But most of us here , cook it deep fried in coconut oil..this recipe is certaintly healthier..

    I have not tried the Tilapia recipe yet, I have just discovered it on the mail in office, but come this weekend I am going to start on it to see it works.

    I am in West Africa and I have the fresh vegetables to buy though expensive, but one could manage to buy them.

    It is my stomache more I want to ensure it is flat like my palm, though I am a fat person.
