Tomato & Cucumber Salad

Ingredients
5 tomatoes, diced
1 onion, finely chopped
1 cucumber, sliced
1 green pepper, chopped
handful chopped basil
handful chopped parsley
6 cloves garlic, finely chopped (optional)
2 tablespoons white wine vinegar
Celtic Sea Salt
pepper

Directions
1. Combine all ingredients in a large bowl.
2. Toss well, seasoning to taste with salt and pepper.
3. Chill before serving.

    What kind of tomatoes do you use/recommend? I grow my own in the summer, but the rest of the year I almost refuse to eat store tomatoes because they taste like cardboard.

    I always get the biggest tomatoes and usually feel them to see which ones are the softest and that way there really juicy and won’t tast like cardboard :)

    I agree about the cardboard tomatoes. When I cant grow my own, I buy the plum (Roma) tomatoes which are better than the other varieties. I will try your idea, too, Stephanie (big, juicy) — thanks!

    Thanks, i actually thought those non-butters were healthy. I got a lot of good tips and am now cutting out the carbs and dressings i don’t need. I absolutely love the seafood salads and will have to switch to these coconut dressings. I like olive oil and it is really good for your skin. if you ad a little fresh lemon it makes the dish spectacular!

    I am surprised to not find more salad recipes on this website. I thought this link might help. It is to PPC Natural Markets. They post the recipes to many of the deli foods they make. You can search by categories, such gluten-free. I bet with a little searching, you could find a ton of good recipes that would be Diet Solution approved.

    Well that was a bit of a shock !
    Salad of toms and cucumber and it was really good.
    I made a home made Dijon Vinegrette and used a chicken thigh that I cooked the night before, that was stuffed with diced lemon and parsley and wrapped in foil and steamed, this I cut into thin slices on top of the salad and was blooming great.
    Gave it to a non slimmer who also loved it.
