Almond Crusted Chicken

The almonds turn this otherwise ordinary chicken dish into a crunchy, nutritious meal that packs a healthy dose of vitamin E and fiber.

Ingredients 1 egg white 3 teaspoons water 6 ounces boneless, skinless chicken breast, pounded thin 1/4 cup sliced almonds, coarsely chopped Celtic Sea Salt and pepper to taste

Directions 1. Whisk egg white, water, salt, and pepper in small bowl. Dip the chicken breast into the egg mixture and dredge in almonds. 2. Heat a skillet over medium heat and lightly coat with unrefined coconut oil. 3. Sautee chicken on one side over medium heat for 3 minutes. Turn and cook for an additional 3 to 4 minutes, until cooked through.

    I love almond crusted food. I also enjoy baking tilapia with a little butter, lemon pepper and coarsely chopped almond slices.

    I’m impressed with this recipe. Most almond chicken concoctions have a thick bready coating that’s been deep-fried in peanut or canola oil. This recipe achieves the same thing, a crunchy outer coating, without the batter and the coconut oil lends such a nice subtle taste to the overall flavor. Well done!

    This sounds delicious and a healthy alternative to original fried chicken. I wonder if another type of oil can be used instead of coconut oil. I suppose it does add a unique flavor. I will try this and comment later.

    I made a few changes to this recipe … I put salt, pepper & garlic powder in some rice flour and coated the chicken before dipping it in the whipped (whole)egg. Then I crumbed the chicken with almond meal. I thought it tasted better than the original recipe!

    I made these and they were wonderful. I did slice the breasts into 3 ounce strips prior to cooking for easy portion control :)

    This was AMAZING! Made this tonight for dinner and served it with steamed fresh green beans and sliced tomatoes. It was unbelievably good and perfectly satisfying. I did make two small modifications. I used skinless chicken tenderloins rather than pounded chicken breast; and I only had whole almonds, so I chopped about 1 c. of them into a fine texture (similar to bread crumbs) and coated the chicken with that instead of the slivered almonds. Truly fabulous! My husband thinks that our “new nutrition plan” (which is what I call DSP) has turned me into a gourmet chef! He LOVES the food I make now and really raved about this dish. :)

    You say to coat the chicken in chopped almonds , But I thought you destroy the oil in nuts if you heat them .. frying them on the chicken the same ?

    I made this tonight for my family and it turned out yummy! A bit bland but could be turned around by adding more spices/salt/pepper. I also ground up some almonds to a fine grain and dipped the chicken in it. I cooked it on my Foreman and it came out great! Will definitely make again :)

    It looks delicious But won’t the baking make the oil in the almond go rancid? It may be better to sprinkle the raw chopped almonds over the chicken After baking?

    Ok a few questions. Is there a different type of oil you can saute it in? I haven’t found any coconut oil where I live, also has anyone tried pecans instead of almonds? Does it turn out the same? Ive never been a big fan of almonds.

  43. Yumm! I have long loved nut-crusted chicken! Another yummy thing you can have w/ it is to slice up some red onion and saute until it starts to wilt, and add a touch of good balsamic vinegar to it. Just a nice side dish!
