I’ve had such a fun and busy week traveling…first to Charleston, South Carolina to see my family, then to Tampa, FL to meet with some fellow fitness authors and now I am back in Charleston at my family’s house.

Regardless of my location, I have been able to keep up with my healthy eating and my workouts (you didn’t expect anything less did you?) Planning ahead and making sure I had looked up the local supermarkets, health food stores and good restaurants in the areas I was visiting is the key to staying on track, even during busy traveling times.

Now along the way I was able to pick up a new and delicious breakfast idea, right from my father in law. The first morning I was here, I saw him put 2 hard boiled eggs (cut in half) on 2 slices of whole wheat bread, with some apple butter spread on both pieces of toast.

YUMMY! I had never thought to do that before.

Now I did have to modify it just a wee bit to make it DSP approved. Here is my version:

· 2 slices of Sprouted Grain bread toasted (the cinnamon raisin variety is the best for this, but any kind will do).

· 1 heaping TBSP of homemade apple sauce (recipe below)

· 2 hard boiled organic eggs

There you go… a perfect breakfast sandwich.

Of course you can modify yours to best fit your portion sizes based on your meal plans (more or less eggs, 1 slice of toast instead of 2). But I assure you the combination is oh so tasty!

Here is my super easy homemade applesauce recipe:

· 3-4 large apples (Any variety). Try using different kinds and see which one you like best or you can do what I do…mix and match several different kinds.

· Stevia to taste

· Cinnamon to taste

· Water

Cut up apples and place in a large pot (no need to peel them). Pour water over them until you have covered the bottom of the pot (you don’t need much water at all. Just enough so you don’t burn your pot while cooking the apples). Bring to a boil and let the apples cook until they are nice and soft (this may take anywhere from 20-30 minutes). Turn off the heat and let the apples sit on the stove to cool for several hours. Once cooled, put into the blender with a few shakes of Stevia and cinnamon (Remember a little bit of Stevia goes a long way so you only need a little bit to sweeten the apple sauce). Place into a glass container and store in the refrigerator.

I hope you enjoy my applesauce and my latest “breakfast sandwich” as much as I do.
