A Great Breakfast Idea
I’ve had such a fun and busy week traveling…first to Charleston, South Carolina to see my family, then to Tampa, FL to meet with some fellow fitness authors and now I am back in Charleston at my family’s house.
Regardless of my location, I have been able to keep up with my healthy eating and my workouts (you didn’t expect anything less did you?) Planning ahead and making sure I had looked up the local supermarkets, health food stores and good restaurants in the areas I was visiting is the key to staying on track, even during busy traveling times.
Now along the way I was able to pick up a new and delicious breakfast idea, right from my father in law. The first morning I was here, I saw him put 2 hard boiled eggs (cut in half) on 2 slices of whole wheat bread, with some apple butter spread on both pieces of toast.
YUMMY! I had never thought to do that before.
Now I did have to modify it just a wee bit to make it DSP approved. Here is my version:
· 2 slices of Sprouted Grain bread toasted (the cinnamon raisin variety is the best for this, but any kind will do).
· 1 heaping TBSP of homemade apple sauce (recipe below)
· 2 hard boiled organic eggs
There you go… a perfect breakfast sandwich.
Of course you can modify yours to best fit your portion sizes based on your meal plans (more or less eggs, 1 slice of toast instead of 2). But I assure you the combination is oh so tasty!
Here is my super easy homemade applesauce recipe:
· 3-4 large apples (Any variety). Try using different kinds and see which one you like best or you can do what I do…mix and match several different kinds.
· Stevia to taste
· Cinnamon to taste
· Water
Cut up apples and place in a large pot (no need to peel them). Pour water over them until you have covered the bottom of the pot (you don’t need much water at all. Just enough so you don’t burn your pot while cooking the apples). Bring to a boil and let the apples cook until they are nice and soft (this may take anywhere from 20-30 minutes). Turn off the heat and let the apples sit on the stove to cool for several hours. Once cooled, put into the blender with a few shakes of Stevia and cinnamon (Remember a little bit of Stevia goes a long way so you only need a little bit to sweeten the apple sauce). Place into a glass container and store in the refrigerator.

As the pros show different foods suggest you lay out in a row the product that you want to showcase. That way you don\’t have a bunch of product piled up on the front of the counter or stove. It also prompts you as you move through the layout.

The roasting process causes the fats in the nuts to go rancid, this causing more free-radical damage in your body. (Free radicals speeds up the aging process!)

I have been enjoying 3 soft boilded eggs with half cup old-fashioned oatmeal (measured dry) for breakfast. Awesome to feel satisfied and not stuffed (instead of stuffed but NOT satisfied). Recently, I have added raw arugula; I put it under the oats and then pour boiling water over. It cooks the oats and wilts the arugula and with eggs, pepper, and dried parsley is just great (and easy and relatively quick).

I have been inspired by your info on foods and recipes. I have only been receiving your emails for 4 or 5 days now. Before that though I had been looking for good pomegranate recipes but I didn’t find one I liked or that I had all the stuff for. Tonight I finally came up with something just using what I had in the fridge! I call it chicken with apple pomegranate glaze.
6 chicken breast halves (fresh or frozen I used frozen)
4 TBSP butter or 2 TBSP butter, 2 TBSP olive oil
2 small apples or 1 medium
1/2 cup pomegranate arils (the seed pods)
1/4-1/2 tsp allspice or cinnamon
Cook chicken with all the butter until done. While it is cooking chop the apples into cubes w/peel. When chicken is cooked through remove it and put aside. Using the left over butter simmer the apples, arils, and allspice for 2-3 min adding more butter if desired. when the apples are soft place the glaze on the chicken. Enjoy!
I paired this with a romaine salad and a homemade vinegarette, but I don’t think that worked well. I think it would go better with steamed veggies or a salad with a sweeter dressing. I really liked the chicken though! I hope you like it.
