Another tasty way to eat salad.

“Yummy” is all I have to say after receiving so many incredible and, what look to be, absolutely delicious salad recipes from so many of our readers. I only wish there were more meals in the day to try each and every one right now!

If you didn’t catch my last newsletter, let me fill you in on the “salad” excitement around here. We’re putting together a new recipe book just dedicated to salads and filled with recipes from Diet Solution followers all over the world.

I am so glad I asked my wonderful readers for recipes to be included because, already, I can see that there are so many recipes I would have never thought of myself. Thanks again to all of those who have already emailed us and thank you to those whose emails are on their way!

My business partner Jeff did bring something important to my attention though.

“Isabel. All salads don’t always have to be cold. What about salads that have a warm component to them?”

Yes, he’s right. He even mentioned a spinach salad with warm bacon dressing that his mom makes.

So, I googled “spinach salad with warm bacon dressing” and I found this delicious recipe (on foodnetwork.com) and made my own Diet Solution modifications.

I’m defrosting my nitrite/nitrate free natural bacon as we speak and I will be serving this salad for dinner tomorrow.

Spinach Salad with warm bacon dressing

Ingredients

Bacon Dressing:

  • 5 slices bacon (I get mine from grasslandmeats.com)
  • 1 1/2 tablespoons finely chopped shallot
  • 1/2 cup red wine vinegar
  • 2 tablespoons honey mustard, or more to taste
  • Sea Salt and freshly ground black pepper

Spinach Salad:

  • 8 cups fresh spinach leaves, stems removed
  • 8 ounces white button mushrooms (about 2 1/2 cups), thinly sliced
  • 1/2 red onion, thinly sliced

Directions

In a skillet add the bacon and cook over medium heat until crisp. Using a slotted spoon transfer the bacon to a paper towel lined plate to drain. Roughly chop and set aside.

Pour off all but 2 tablespoons of fat from the skillet. Heat the remaining fat over medium-high heat, add the shallots and cook for 2 minutes, stirring occasionally. Whisk in the vinegar, desired amount of mustard, and salt and pepper, to taste. Scrape the brown bits from the bottom of the skillet, bring to a simmer, then remove the skillet from the heat.

For the salad, in a large salad bowl, toss together the spinach, mushrooms, bacon and onion. Pour the dressing over the salad and toss to combine. Serve warm.

This is my kind of recipe…simple and quick to make. I know my family will love it.
